Nana’s scones

450 degree oven, 12-15 mins baking time

  • 2 cups white flour
  • 1 teaspoon baking soda
  • 2 teaspoons Cream of Tartar
  • 1/4 teaspoon salt
  • 3 Tablespoons sugar
  • Margarine the size of 2 eggs (3/4 of a stick of unsalted butter or about 125 ml/1/2 cup)
  • 1/3 cup of milk
  • 1 egg, beaten (add to milk)
  • black currants or raisins, about 1/4 cup but enough so that it looks right!
  1. Mix dry ingredients well.
  2. Rub in margarine; add fruit and egg/milk mixture.  Work with fingers until combined but don’t over work. 
  3. Place on ungreased cookie sheet after rolling out to 1/2 inch thickness on floured board & cut into rounds or triangles. 
  4. Bake at 450 degrees 10 to 15 minutes. Watch for the last 5 minutes as they brown-up quickly.
