Lemon Cheese (or Curd)

  • 1 cup Sugar
  • 1/2 cup Butter
  • 2 Lemons
  • 3 Eggs
  1. Melt sugar and butter in a double boiler.
  2. Grate rind from lemons and add juice also.
  3. Beat and add eggs.
  4. Cook until it thickens. (It will thicken more as it cools!)
  5. Fill baked tart shells, and add whipped cream to top of tarts if desired.
  6. Freezes well!
