
- 1 cup Sugar
- 1/2 cup Butter
- 2 Lemons
- 3 Eggs
- Melt sugar and butter in a double boiler.
- Grate rind from lemons and add juice also.
- Beat and add eggs.
- Cook until it thickens. (It will thicken more as it cools!)
- Fill baked tart shells, and add whipped cream to top of tarts if desired.
- Freezes well!
