Christmas Cake

She was always soooooo proud of her Xmas Cake — thought it was the best fruitcake she ever had. She made it for me for my wedding cake three layers, which I think Mrs. McCelland helped her stir because the batter was so dense Mum’s wrist was getting sore.

300° oven, 1 3/4 hours

  • 1 1/2 cups whole Brazil nuts
  • 1 1/2 cups whole walnuts or pecans
  • 8 oz. Dates
  • 2/3 cup Glazed orange (peel or fruit)
  • 1/2 cup Seedless raisins
  • 8 oz. Green cherries
  • 8 oz. Red cherries
  • 3/4 cup Flour
  • 3 Eggs, beaten
  • 1/3 cup Sugar
  • 1/2 tsp. Baking powder
  • 1 tsp. Vanilla
  1. Dredge fruit and nuts with four, baking powder and sugar.
  2. Beat eggs and vanilla.
  3. Blend it all.
  4. Grease loaf pan and add mixture.
  5. Bake for 1 3/4 hours at a 300° oven.
  6. Leave wrapped in tinfoil to season.
