I love Sundays. The BF and I usually spend it cooking, cleaning and generally relaxing around home. This Sunday we decided to make a whole whack of pasta sauce to freeze. Apparently this was THE thing to do because when we got to the grocery store tinned tomatoes were a hot sale item (gotta love when the universe aligns with your thinking). The result was a very yummy tomato sauce and a stocked freezer.

| 1. Get a bunch of tomatoes (fresh or tinned or both, we used both), onions, shallots, basil and garlic. |

| 2. Blanch the tomatoes. |

| 3. Peel the tomatoes while the onions are caramelizing with a little vinegar. Add the garlic after a few minutes and saute for a few minutes. Add the roughly chopped tomatoes and tinned tomatoes. |

| 4. Let simmer for a couple of hours with a couple of bay leaves. Add the basil near the end of cooking and enjoy. |
